A körte átvétele, vizsgálata
Fajtáját tekintve, a felvásárolt körtemennyiség minimum 50%-át, a korábban már említett és Göcsej vidékén őshonos Bosc kobak körtefajta teszi ki, míg a fennmaradó hányadot a göcseji vidéken termett őshonos körtefajták adják. A beérkező körte mennyiségi átvétele mérlegelés alapján, minőségi átvétele érzékszervi és szárazanyag-tartalom vizsgálat alapján történik. Az alapanyag szárazanyag-tartalma minimum 14 ref. % kell legyen. Érettségi állapot: érettől a túlérettig. Egészségi állapot: teljes mértékben egészséges. Tisztaság: idegen anyagtól (föld, levél, gally, kő, fém) mentes. Az átvételkori vizsgálat első lépéseként a beszállított gyümölcsből átlagmintát kell venni. Hanagy tételben érkezik, minden tizedik rekeszből egy-egy kilogrammot, ha csak néhány rekesz a szállítmány, akkor rekeszenként fél-fél kilogrammot, ha ömlesztve érkezik, akkor a kirakás alatt folyamatosan kell a szükséges mennyiséget, azaz 100 kilogrammonként 0,2 kilogramm mintát kivenni. A gyümölcs átvételekor a következő vizsgálatokat kell elvégezni: érzékszervi vizsgálat: érettségi fok, tisztaság, penész és rothadás jelei, sérülések, törődöttség, fajtajellemzők; cukortartalom vizsgálat, várható alkoholtartalom meghatározása.
Cefrekészítés
A tiszta, fertőzéstől mentes, érett, zúzott körte édes cefréjét cefreszivattyúval az erjesztő tartályokba szivattyúzzák. Itt történik az erjedést segítő anyagok hozzáadása. Az irányított erjesztésnél nagyon fontos a hőmérséklet pontos beállítása (18-22 °C), tartása, valamint a pH érték optimalizálása (pH: 3-4 között), mivel így a fajélesztő beoltásával a legkedvezőbb eredménnyel lehet a körtecefrét minden hibától mentesen kierjeszteni.
Erjesztés
A cefréhez adagolt fajélesztő alkalmazása biztosítja az erjedés gyors beindítását, az egyenletes erjedés lefutását és a cukor maradék nélküli kierjedését, valamint az optimális aroma- és alkohol-kihozatalt, a hőmérséklet ellenőrzése és állandó értéken (18-22 °C) tartása mellett. A keletkező szén-dioxid védi a cefrét az oxidáció káros hatásaitól és a káros mikroorganizmusoktól, ezért elő kell segíteni a cefre felületén a szén-dioxid párna kialakulását. Az erjesztő tartályokon vízzár segítheti a szén-dioxid eltávozását. Az erjesztés időtartama a körte beltartalmi értékeitől függően 9-10 nap. A kierjedt cefrét minél hamarabb fel kell dolgozni, vagy a lepárlás megkezdéséig a szakszerű tárolás alapfeltételeit biztosítani kell, amely azt jelenti, hogy a cefrét minden körülmények között fénytől védeni kell és törekedni kell arra, hogy a cefre tárolási hőmérséklete a 12- 13 Celsius fokot nem haladhatja meg. A cefrét olyan tárolóedényben kell tárolni, mely minden esetben tele van és a fölötte lévő légrés a teljes folyadékmennyiség 3%-nál több nem lehet. A szakszerű tárolás után a cefre nem tartalmazhat vajsavas, ecetsavas vagy tejsavas erjedésre utaló ízeket, illatokat, valamint penészes és dohos szagtól minden esetben mentesnek kell lennie.
Lepárlás(desztilláció) és finomítás
A lepárlás hagyományos, rézből készült, un. kisüstön többlépcsős desztillációval történik. Az üstök térfogata nem haladja meg az 1000 litert. A cefre először a főzőüstbe kerül, innen kapják az alszesz elnevezésű párlatot. A finomító üstökben az alszeszből finomítással nyerik a jó minőségű körtepárlatot. Lényeges kívánalom a finomítás során az elő-, közép- és utópárlat megfelelő szétválasztása, amivel biztosítható, hogy a káros íz- és illatanyagok ne kerüljenek a késztermékbe. Ezt szakszerűen folyamatos érzékszervi vizsgálattal, töménység- és mennyiségméréssel lehet elvégezni. Az előpárlat leválasztása addig tart, amíg ízéből eltűnnek a csípős aldehidek és szép gyümölcsízű lesz a párlat. Az előpárlat leválasztásánál törekedni kell arra, hogy az előpárlat a főzőüstből kikerülő párlatmennyiség minimum 2-3 %- a legyen. Ezután a főzést (a finomítást) addig kell végezni, amíg a párlat szeszfoka 18 fok alá csökken, 18 fokos párlatnál a főzést abba kell hagyni. Ez jelenti a középpárlat végét. Az üst alján maradó, ún. utópárlat kiöntésre kerül. A finomítási művelet nagy szaktudást és gyakorlatot igényel, valamint elengedhetetlen a kierjedt cefre rendszeres vizsgálata.
Pihentetés és érlelés
Pihentetés: a finomítást követően az italt minimum 7 napig rozsdamentes acél tartályban kell pihentetni. Ebben az időszakban az itallal semmiféle manipulatív technológiai lépést végezni nem szabad. Érlelés: A 7. napot követően az ital tölgyfahordóban minimum 3 hétig érlelődik, a lepárlás során keletkező eredeti szeszfokával, amely kb. 65–70 fok. Az érlelő fahordókat 14-18 C° között, minimum 80 %-os páratartalmú helyiségben kell elhelyezni és fagyveszélytől, közvetlen napsütéstől és sugárzó hőtől óvni kell. Az érlelés elvileg korlátlan ideig tarthat gyakorlatilag minőségromlás nélkül. Ezt követően történhet az ital szeszfok beállítása, illetve hűtve szűrése.
Alkoholtartalom beállítása
A gondosan kiérlelt kisüsti párlat alkoholtartalmát, jó minőségű ioncserélt vízzel, a fogyasztói forgalomba hozatal előtt kell beállítani.
Hűtve szűrés
A megfelelő alkoholtartalomra beállított ital hűtve szűrése kulcsfontosságú lépés a Göcseji körtepálinka készítése során és közvetlenül palackozás előtt 2- 5 nappal történik Az italt lemezes hőcserélőn 0 és –3 C° közötti hőmérsékletre kell hűteni, ezt követően pedig 24 órán keresztül hőszigetelt tartályban kell pihentetni. A pihentetés után keretes szűrőn vagy lapszűrőn (1- 35 mikrométer pórusnagyság) kerül szűrésre, és ezt követően kerülhet sor a palackozásra.
Palackozás
A megfelelő alkoholtartalomra beállított és szűrt körtepálinkát tisztára mosott vétyemi üvegpalackba, vagy a vétyemi üvegpalack méretarányait követő más üvegpalackba kell tölteni; amely tömítőbetétes alumínium csavarzárással, parafa dugóval, vagy üvegdugóval zárható. A vétyemi üvegpalack 175-210 mm közötti magassági és 100-130 mm közötti szélességi méreten belül eső zömök palack. A vétyemi üvegpalack méretarányait részletesen a III. sz. melléklet tartalmazza. A megengedett csomagolási egység maximum 1 liter, ezen felül csak egyedi, reprezentatív ajándékként csomagolható. A lezárt termék díszdobozba is helyezhető.
