Az elkövetkezendő sorozatunkban az eredetvédett pálinkák készítéséről lesz szó általánosan bemutatva. Az első részben ismerjék meg a Békési Szilvapálinka készítésének menetét lépésről lépésre.
A termék előállítási módja
A hagyományok megőrzése – a technológia, technika fejlesztése mellett is – az egyik legfontosabb célja a békési szilvapálinkának.
A szilva átvétele, vizsgálata
A beérkező szilva mennyiségi átvétele mérlegelés alapján, minőségi átvétele érzékszervi és szárazanyag-tartalom vizsgálat alapján történik. Az átvételkori vizsgálat első lépéseként a beszállított gyümölcsből átlagmintát kell venni. Ha nagy tételben érkezik, minden tizedik rekeszből egy-egy kilogrammot, ha csak néhány rekesz a szállítmány, akkor rekeszenként fél-fél kilogrammot, ha ömlesztve érkezik, akkor a kirakás alatt folyamatosan kell a szükséges mennyiséget kivenni. A gyümölcs átvételekor a következő vizsgálatokat kell elvégezni: érzékszervi vizsgálat (érettségi fok, tisztaság, penész és rothadás jelei, sérülések, törődöttség, fajtajellemzők); cukortartalom vizsgálat; várható alkoholtartalom meghatározása.
Cefrekészítés
Az erősen szennyezett szilvát meg kell mosni. A tiszta, fertőzéstől mentes, érett szilva magját magozógépen eltávolítják úgy, hogy a magok kb. 20 %-a a cefrében maradjon. A magozott és zúzott édes cefrét cefreszivattyúval az erjesztőtartályokba szivattyúzzák. Itt történik az erjedést segítő anyagok hozzáadása. Az irányított erjesztésnél nagyon fontos a hőmérséklet pontos beállítása (25-28 Celsius fok), tartása, valamint a pH érték optimalizálása (pH: 3-4 között), mivel így a fajélesztő beoltásával a legkedvezőbb eredménnyel lehet a szilvacefrét minden hibától mentesen kierjeszteni.
Erjesztés
A cefréhez adagolt fajélesztő alkalmazása biztosítja az erjedés gyors beindítását, az egyenletes erjedés lefutását és a gyümölcscukor maradék nélküli kierjedését, valamint az optimális aroma- és alkohol-kihozatalt, a hőmérséklet ellenőrzése és állandó értéken (25-28 Celsius fok) tartása mellett. A keletkező szén-dioxid védi a cefrét az oxidáció káros hatásaitól és a káros mikroorganizmusoktól, ezért elő kell segíteni a cefre felületén a szén-dioxid párna kialakulását. Az erjesztő tartályokon vízzár segíti a szén-dioxid eltávozását. Az erjedés időtartama a szilva beltartalmi értékeitől függően 9-10 nap. A kierjedt cefrét minél hamarabb fel kell dolgozni, vagy a lepárlás megkezdéséig a szakszerű tárolás alapfeltételeit biztosítani kell (minél hidegebben, vízzár). Az erjesztési folyamatokat és a tárolást élelmiszeripari minősítéssel rendelkező tartályokban végzik.
Lepárlás és finomítás
A kierjedt cefrét a főzési energiaigény csökkentése érdekében előmelegítő tartályba fejtik és ott előmelegítik annyira, hogy alkohol- és aroma-veszteség nélkül kezdhető meg a lepárlás. A lepárlás hagyományos, rézből készült kisüstökben desztillációval történik. A kisüstök térfogata legfeljebb 1000 liter. Az előmelegítő tartályból a kierjedt cefrét a gőzfűtéses főzőüstökbe szivattyúzzák. A finomítási eljárás során lényeges kívánalom az elő-, közép- és utópárlat megfelelő szétválasztása, amivel biztosítható, hogy a káros íz- és illatanyagok ne kerüljenek a késztermékbe. Az elő- és utópárlat mennyiségét alkoholtartalom- és mennyiségméréssel, valamint érzékszervi vizsgálattal állapítják meg. A finomítási művelet nagy szaktudást és gyakorlatot igényel, valamint elengedhetetlen a kierjedt cefre rendszeres vizsgálata.
Érlelés és tárolás
A párlat érlelése gondosan előkészített és tisztított, maximum 1000 literes fahordókban történik. Az érlelő fahordókat egyenletes hőmérsékletű, közepes páratartalmú helyiségben kell elhelyezni. Fagyveszélytől, közvetlen napsütéstől, sugárzó hőtől óvni kell; 25 Celsius fok feletti külső hőmérséklet esetén a tárolóhelyiség levegőjét vízpermetezéssel legalább hetente nedvesíteni kell. Az érlelési idő fahordóban legalább 3 hónap. Az érlelt pálinka tárolása saválló fémtartályokban történik.
Alkoholtartalom beállítása
A gondosan kiérlelt kisüsti párlat alkoholtartalmát a palackozott árura vonatkozó igen szigorú előírás (± 0,3% V/V) következtében, jó minőségű ioncserélt vízzel, a fogyasztói forgalomba hozatal előtt kell beállítani. Az alkoholtartalom kizárólag az alapanyagként felhasználható gyümölcs lepárlásából származó alkoholból eredhet.
Palackozás
A megfelelő alkoholtartalomra beállított és szűrt szilvapálinka tisztára mosott üveg vagy kerámia palackba tölthető, tömítőbetétes alumínium csavarzárással vagy parafa dugóval zárható.
