Mivel a kékszőlő feldolgozása hagyományos héjon erjesztéssel készül, ezért a préselést követően a vörös törköly azonnal rendelkezésre áll a főzéshez. A fehér borok irányított erjesztéssel hűtve készülnek, megőrizve a lehető legtöbb íz-aromaanyagot. Az így keletkezett seprő szintén kiváló alapanyag.
