2007. novemberében jelent meg ismét a Pannonhalmi Pálinkárium a kereskedelmi pálinkafőzdék sorában, bár a Pálinkárium működése egészen az 1917-es esztendőre nyúlik vissza.
Az új tulajdonosok a főzde megvásárlását követően felújították annak épületét, korszerűsítették a hagyományos magyar, üstös rendszerű szakaszos technológiát, így megkezdődhetett a Pannonhalmi pálinkák gyártása. E kiváló minőségű pálinkákat Pannonhalma és környékén termett, válogatott, jó minőségű alapanyagokból állítjuk elő. 2008 tavaszától a piacon a Pannonhalmi top prémium kategóriájú kisüsti és ágyas pálinkák, valamint a Pannonhalmi Pálinka Parfüm családjának termékei is megtalálhatóak. Termékeink hagyományos ízekben: barack, körte, szilva, törköly, valamint divatos ízekben: málna, fekete ribizli, bodza, alma, meggy, ágyas pálinkaként pedig barack, körte, szilva, törköly és meggy változatban kerülnek forgalomba. A növekvő piaci igényeknek megfelelően Pannonhalmi mézes pálinkákkal bővítjük termékválasztékunkat, mézes meggy, málna és barack ízekben.
Pálinkafőzdénk rövid múltja ellenére
